Padma Culinary Journey: Flavours of Nikkei & Latin America
Padma Resort Legian invites you to “Flavours of Nikkei & Latin America”, an exclusive two-day dining affair as they invite Guest Chef Silverio Martinez to collaborate with the resort’s Chef Juan Carlos Jara Eyzaguirre.
Held on Saturday & Sunday, 4 & 5 October 2025, indulge in two evenings full of flavour as the South American chefs work together to present Latin and Japanese flavours. As the Head Chef at CasaLena, a Latin American grill in Jakarta, Chef Silverio Martinez is renowned for his passion for wood fire cooking and his ability to bring out the depth of Latin flavours. His career has spanned acclaimed kitchens across Asia and Mexico, including a role as Executive Chef with Marriott International in his home country.
Meanwhile, Chef Juan Carlos Jara Eyzaguirre is the driving force behind TENKAI Japanese Nikkei Restaurant. As the Executive Sous Chef, he is responsible for curating TENKAI’s menus and shaping the unique dining experience. This upcoming event will be his first collaboration since joining the resort. The Peru-born Chef Juan Carlos has over 14 years of international experience in Brazil, China, Uruguay, Turkey, Qatar, and Indonesia. At TENKAI, he carries with him new energy to Nikkei cuisine, introducing dishes that connect personal stories with culinary innovation. His recent standouts include Parihuela Udon, inspired by his father’s favourite meal, featuring shrimp, udon, and Japanese-Peruvian spices; Ise Ebi Popcorn, lobster tempura with passion fruit; and Tako, slow-cooked octopus with anticuchos and hauncaina sauces.

Together, they will showcase their unique bond as South Americans and draw upon their shared heritage to deliver an authentic yet innovative dining experience. On Day 1, Saturday 4 October 2025, from 6 PM to 10.30 PM, Padma Resort Legian welcomes you to Izakaya Night at TENKAI. Savour a free-flow Izakaya-style menu, merging Japanese Nikkei flavours with Latin American influences, serenaded by live acoustic guitar and vocals. Priced at IDR 480,000++ per person.
On Day 2, Sunday, 5 October 2025, from 5.30 PM to 10.30 PM, revel in a semi-buffet Latin American-style barbecue showcasing a variety of surf and turf dishes, set to DJ-curated Latino music. The exciting barbecue will be held at The Deli Grass Lawn. Prices are based on selected items.
The upcoming event promises to deliver exquisite cooking shaped by South American heritage and global experience. Beyond a dining event, it is a celebration of culture, creativity, and collaboration at Padma Resort Legian.
