The two-day programme, dubbed COMO Journey: Taste of the Land, is an ode to World Food Day, encompassing a chef’s battle, a sustainable food discussion and finally, a Four Hands Dinner.

The central idea that ‘COMO Journey: Taste of the Land’ hopes to shares is that sustainability and culinary excellence can be complimentary forces; an idea expressed through the unique experiences that will unfold across 16 and 17 October 2025, bringing the culinary industry, chefs, and sustainability advocates together for this important message.

The Mystery Box Chef Battle Challenge

COMO Beach Club will transform into a stage for culinary creativity as Colin McSherry, the Executive Chef of COMO Uma Canggu faces off against Chef Ami, MODENA Culinaria’s Resident Chef and Runner-Up of MasterChef Indonesia Season 10.

The two chefs will be presented with their mystery ingredient and will tasked to create an authentic Balinese dish using a zero-waste approach, and MODENA’s advanced induction and convection appliances. It will be a test of creativity, craftsmanship and resourcefulness.

COMO Conversation: Nourishing Beyond the Kitchen

Head into the illustrious COMO Penthouse for an intimate, fireside chat addressing one of the most pressing global issues of our time: food security.

The panel will be moderated by Sandra Pramitha, Outreach Officer of Scholars of Sustenance (SOS), the session will welcome insightful speakers, including: Vania Herlambang, Sustainability Advocate and Puteri Indonesia Lingkungan 2018; Winda Aulia, Sustainability Lead at MODENA; and Lelie Liana, Cluster Sustainability Manager for COMO Hotels and Resorts in Bali. Together, they will explore how collaboration across sectors can make access to safe, nutritious, and culturally meaningful food a universal right rather than a privilege.

Four-Hands Dinner: Taste Without Borders – A Zero-Waste Celebration of Land and Sea

COMO Journey: Taste of the Land culminates with a four-hands, six-course dining experience crafted by Chef Ami and Chef Colin McSherry, powered by MODENA Culinaria.

The dinner will bridge Indonesian heritage with international flair, with Chef Ami preparing the locally-inspired flavours – Jumpa Jampi, Wirangi, and Ramoe Mantra (a signature dessert conceptualised by Chef Bella, Pastry Chef of MODENA Culinaria); meanwhile, Chef Colin brings global flavours to the fore with his signature Crab and Squid Ink Linguine, Fish Bouillabaisse, and Grilled Mackerel with tartar, cucumbers, chard bone, and shiso dressing.

Every course is paired with a story card, taking guests on a culinary journey that celebrates Bali’s land and sea, its cultural heritage, and the shared values of innovation and sustainability. Designed with a zero-waste philosophy and prepared with locally sourced ingredients, the dinner offers an elegant outdoor experience at COMO Beach Club.

This six-course set menu dinner is priced at IDR 1,100,000++ per person.
