Ragam Rasa: An Exclusive Four-Hands Dinner

On Thursday, 8 October 2026, Roso Restaurant at The Meru Sanur and Bali Beach Hotel, The Heritage Collection celebrates National Batik Day with “Ragam Rasa,” an exclusive four-hands dinner exploring Indonesia’s culinary heritage through a contemporary lens.

From 6 PM to 9 PM, the dinner brings together Celebrity Chef and Culinary Consultant Degan Septoadji and Executive Sous Chef Prima Udayana of The Meru Sanur and Bali Beach Hotel, The Heritage Collection. Together, they present a menu inspired by the archipelago’s diverse culinary traditions as well as the ingredients, techniques and stories that shape them.

The theme, “From Local Roots to Global Recognition“, draws upon the story of batik itself. Rooted in local craftsmanship, traditions and cultural identity, batik has developed into an internationally recognised art form. Ragam Rasa explores a similar journey through food, presenting Indonesian flavours and ingredients in a more modern expression while retaining their cultural foundations.

Priced at IDR 1,500,000 net per person, the menu begins with Scallop Naniura, pairing Lombok farm scallop tartare with shallot, turmeric, and andaliman pepper, and kaffir lime aioli. This is followed by Bebek Mebasa, a local duck terrine accompanied by Balinese spices, rosella and tamarind sauce. Among the evening’s highlights is Salmon Lodeh by Chef Degan, combining slow-roasted salmon with vegetables and tempeh in a spiced coconut broth infused with galangal, green chilli and lemongrass.

The progression continues with Bulung & Pakel Sorbet, inspired by Serangan seaweed and Pakel mango, before moving to Kondro – 48-hour sous-vide US beef short ribs served with kluwek paste and peanut. The meal concludes with Kolak Pisang Ubi, a contemporary interpretation of the familiar Indonesian dessert, bringing together banana, sweet potato, pandan, palm sugar and coconut ice cream.
