
Following its success in Jakarta, Carbón has opened its doors in Ubud, introducing a more intimate interpretation of its Latin American-inspired dining concept. Located within the newly opened Alaya Suites Ubud on Jalan Raya Pengosekan, the restaurant is the result of a collaboration between MDA Restaurants and Alaya Group, marking the brand’s first venture into Bali.
Rather than replicating its Jakarta counterpart, the restaurant has been thoughtfully adapted to its surroundings. While retaining the brand’s signature fire-led cooking, the menu embraces the abundance of Bali’s seasonal produce, drawing on natural affinities between Mexican, Peruvian and Indonesian cuisine. Ingredients such as chilli, corn, cacao, tropical fruits and fresh herbs create a menu that feels rooted in Latin America whilst reflecting Ubud’s rich agricultural landscape.




Leading the kitchen is Chef Patron Andri Dionysius, whose philosophy remains centred on quality ingredients and restrained technique. Alongside an à la carte selection featuring Carbón favourites and Ubud-exclusive creations, guests can embark on a thoughtfully curated tasting menu, designed as an evolving culinary journey with future editions set to showcase new seasonal inspirations. A well-rounded beverage programme complements the experience with classic cocktails, wines and carefully crafted non-alcoholic pairings.
Warm, intimate interiors complete the experience, offering a refined yet relaxed setting suited to long lunches, romantic dinners or celebratory evenings. As Ubud’s culinary landscape continues to evolve, Carbón Ubud adds a distinctive new destination where Latin American flavours meet the spirit of Bali.
