Two Masters, One Legacy: Rumari and ESA’s Four-Hands Dinner Collaboration
On 13 and 14 June 2025, two distinct culinary regions find common ground as the chefs of Bali’s Rumari and Jakarta’s ESA collaborate for an unmissable four-hands dinner, taking place at Rumari, Raffles Bali.
Chef Gaetan Biesuz, Raffles Bali’s Director of Culinary, has crafted the dining experience at Rumari to reflect the rich bounty of Bali and Indonesia, sourcing exotic local ingredients and transforming them into dishes of culinary –and even geographic– discovery. Meanwhile, Chef Aditya Mustika and his team at ESA, Jakarta, are on a mission to redefine Jakarta’s own culinary identity, presenting their take on the ‘New Jakarta Cuisine’.
Despite their distinct approaches to cooking, the two chefs find a parallel in their approach to evolving the identity of Indonesian cuisine –hence the collaboration’s title ‘Two Masters, One Legacy.’ Both Chef Gaetan and Chef Aditya blend tradition with a contemporary flair, offering new presentations of well-loved flavours from the archipelago.
These interpretations will be placed side-by-side in the upcoming dinner, inviting discerning guests to savour the flavours of Jakarta and Bali, wrapped elegantly into one culinary experience. Perched atop a verdant hillside overlooking Jimbaran Bay, Rumari will set the perfect scene for diners, complemented by the restaurant’s wine list (Wine Spectator’s Award of Excellent 2022-2024) and its status as Indonesia’s first and only Krug Ambassade.
