Jimbaran’s popular rooftop hotspot, Above Eleven Bali, proudly introduces Eduardo Montes as their new Head Chef to lead the culinary team.
Established since 2016, Above Eleven Bali stands out as being a stunning rooftop destination with a distinct concept of serving the unique Nikkei cuisine, a harmonious marriage between Peruvian and Japanese food. Voted as Bali’s Best South American Restaurant 2018 and Top 20 Bali’s Best Upmarket Venue 2018 by two esteemed lifestyle and food magazines in Indonesia, Above Eleven brings a refreshing urban vibe to the tropical island.
Born in Huancayo, one of the capital areas of Peru well-known as a cultural and commercial centre of the whole Peruvian Andes, Eduardo Montes graduated from D’Galia Culinary Institute in Peru, where he honed his skills and developed his style and cooking technique. He gained a lot of knowledge and experience from working with some of the best Peruvian chefs in the world, including Jaime Pesaque and Rafeal Osterlin, whose restaurants were included in the World’s 50 Best Restaurants.
Eduardo cultivated 15 years of culinary experience, from travelling around the globe and working at a variety of restaurants in Dubai, Hong Kong, Italy, and back in his home country. He reached the pinnacle of his culinary career in 2016, when he opened Cassa M-Barra and M Restaurant in El Tambo, Huancayo, Peru.
“What makes a restaurant different than others is not only the deliciousness of the food, but it also involves a dining experience. I will cook the best of Peruvian dishes using the best of local Balinese ingredients, such as prawn causa, black squid ink causa, tuna ceviche using fresh produce from Jimbaran’s fish market. I want to remind people that they’ll embark in a unique Peruvian dining experience in Bali by bringing together the best of both worlds,” said Eduardo Montes.
