
Set along the vibrant Canggu beachfront, a new culinary destination quietly emerges at Regent Bali Canggu: introducing CURE Bali. Adding a new dimension to the resort’s culinary landscape, the restaurant positions itself as a premier dining destination amid Canggu’s evolving culinary scene.
The brainchild of Michelin-starred chef Andrew Walsh, CURE Bali presents a dining experience that weaves modern Eastern techniques with vibrant, complex Asian flavours, all defined by Bali’s coastal allure and spirit of hospitality.
The opening builds on the legacy established by the original Michelin-starred CURE concept in Singapore. Celebrated for its ingredient-forward approach and refined culinary vision, CURE has become synonymous with mindful cooking rooted in classical European foundations while drawing inspiration from Asia’s vast culinary traditions.


Working closely with Chef Andrew to shape CURE Bali’s culinary identity is Chef de Cuisine Arvin Tjandra, the man in charge of the kitchen’s day-to-day operations. The CURE Dining Room’s menus highlight exceptional seafood, premium meats, and seasonal produce, allowing complex flavours to shine through texture, balance, and restraint.
A large portion of the dishes explores curing techniques that deepen flavour while maintaining freshness and are presented in a sharing-style format. Several standouts include the Giant River Prawn, a dish that marries French culinary tradition with Southeast Asian vibrancy, and the Hokkaido Scallop, inspired by the traditional Yogyakarta stew mangut.



Meanwhile, the seaside Bar Nua complements the dining room with a cocktail programme that echoes CURE’s culinary philosophy. Derived from the Irish word “Nua”, meaning “new”, the bar reimagines classic cocktail structure through modern culinary techniques, Asian influences, and locally sourced ingredients. Through the CURE Dining Room, Bar Nua, and the upcoming twelve-seat open-kitchen The Curing Room, CURE Bali is set to become a multi-faceted gastronomic hub where European and Asian culinary techniques and flavours intersect.
CURE Bali is open Tuesday to Sunday from 5 PM to 12 AM (Dining Room) and 5 PM until late (Bar Nua).
