Culinary Assembly with Petty Elliot
Indonesia’s culinary diversity takes centre stage this August as Desa Potato Head Bali welcomes celebrated chef and author Petty Elliot for its first culinary Cultural Exchange Series.
Born in Manado, North Sulawesi, Petty Elliot is the self-taught chef behind The Indonesian Table and The Indonesian Vegetarian Table books, both published by Phaidon. For decades, her work has celebrated the depth, diversity and generosity of Indonesia’s regional cuisines. Across four days, she will lead two distinct dinners and an open conversation, sharing stories and perspectives from across the archipelago.
The series begins on Thursday, 27 August 2026 with Purnama Dinner: Archipelago Garden, an evening at Tanaman held under the full moon. From 8 PM to 10 PM, Petty Elliot will present a plant-based menu inspired by native spices, herbs and produce. Designed to complement Tanaman’s monthly Purnama full-moon meditation, each course traces a different aspect of Indonesia’s gastronomic biodiversity.
On Saturday, 29 August 2026, the focus moves to Long Table Dinner: Islands of Spice and Forest, a long-table dinner at Kaum Bali running from 6 PM to 8 PM. Joined by Chef Wayan, Petty will explore the traditions of Eastern Indonesian cuisine through a set menu travelling across Maluku, Sulawesi, Flores, Sumbawa, Lombok and Bali. Guests can expect notes of nutmeg and clove, the freshness of sambal dabu-dabu, kenari nuts and jungle greens such as moringa and wild pakis fern as part of a showcase of individual dishes and a broader picture of how Indonesian food has been shaped from one island to the next.
The residency concludes on Sunday, 30 August 2026 with Desa Dialogue Live: The Indonesian Vegetarian Table at Dome, from 5.30 PM to 7.30 PM. Drawing on decades of travel and culinary experience, Petty Elliot will delve deeper into the traditional ideas behind her latest cookbook and the importance of preserving cultural knowledge through regional Indonesian cuisine, in a live conversation where guests can also take part and ask questions.
